Baking is chemistry. Small differences in ingredient amounts can change how a recipe turns out. But many recipes use volume measurements (cups, quarts) for ingredients that are better measured by weight.
A cup of flour can weigh anywhere from 120g to 160g depending on how you scoop it. That’s a 33% difference — enough to make bread too dense or cake too dry.

Tips for Accurate Baking
- Use weight when possible. A kitchen scale removes all ambiguity.
- Spoon and level flour. Don’t scoop directly from the bag — it compacts the flour and increases the weight per cup.
- Use the same measurement type throughout. If a recipe gives weights, stick with weights. If it gives volumes, stick with volumes.
- Check your density source. Different sources list slightly different densities for the same ingredient. Use a consistent reference.
When Volume Is Fine
For liquids like water, milk, and juice, volume measurements are reliable because their density is consistent. It’s dry ingredients — flour, sugar, cocoa powder — where volume becomes unreliable.
